Ingredients:
2 medium avocado, ripe, peeled and pitted
1/4 cup sweet corn kernels( Available at frozen section in any grocery store)
1 red tomato chopped
1/4 cup finely chopped red onions
2 tsp minced jalapeno or Serrano chilies
1/4 cup chopped green/red pepper
2 tbsp olive oil/mustard oil
2 tbsp lime juice to prevent from turning black
2 tbsp chopped cilantro
Kosher salt and pepper to taste
Lots of Tortilla chips for serving
Directions
- Defrost the sweet corn if it's frozen.
- In a medium bowl, combine tomato, onion, chili, pepper, and lime juice; set aside.
- In a medium bowl, mash avocado with a fork until smooth.
- Add cilantro, salt,olive oil and pepper. Add tomato mixture to avocado mixture; stir until well blended.
- Let set at least 1 minute for the flavors to blend before serving.
