This is a breakfast menu for people with hypothyroid problem. Since I have thyroid problem, I am trying to put more thyroid recipes in my blog. Eggs,cheese,mushrooms-all these are helpful in preventing thyroid problem.
Prep Time: 5 Minutes
Cook Time: 5 to 7 minutes
Ingredients:
2 eggs, beaten
1 tablespoon olive oil
1 good handful of button mushrooms, sliced
2 tbsp grated any of your favorite cheese
1 tbsp chopped onion (optional)
1 tbsp bell pepper (optional)
1 pinch salt and pepper to taste
small handful any of your favorite herbs parsley/basil/cilantro leaves
Directions:
- Heat the olive oil in a small non-stick frying pan.
- Place the mushrooms in the pan and fry over a high heat, stirring occasionally for around 3 minutes or until golden.
- Lift out of the pan and place into a bowl and mix in the cheese,onion,pepper and basil. Basil smells really very good.
- Place the pan back on the heat and swirl the eggs into it.
- Cook for around 2 minutes on low heat or until the egg is set to your liking.
- Spoon the mushroom mix over one half of the omelet.
- Then using a spatula, flip the omelet over to cover the mushrooms.
- Cook for another minute then lift onto a plate and serve with multi-grain bread..
1. Mix all the ingredients in a bowl.
2. Heat oil in a frying pan and transfer the mixture into the pan.
3. Cook on low heat for 6 to 10 minutes until the egg is set to your liking.Enjoy and have fun with your breakfast.
