Spinach-Pumpkin Curry with Telapia Fillet

Prep Time:20 Minutes 
Cook time: 30 Minutes

Ingredients:
1 pound fresh spinach (chopped)
4 cups of pumpkins (peeled,cleaned and cut into bite size pieces)
4 to 5 pieces of Telapia Fillet with 1 tsp turmeric,1 tsp chili powder,1 tsp salt and oil to fry ,You can use Telapia with bone and skin too


1 tsp turmeric powder
1  tsp cumin powder
1  tsp red chili powder
1/2  tsp coriander powder
1  tablespoon garlic powder or fresh paste
1  tablespoon ginger powder or  fresh paste
1 medium size onion chopped
2 tsp salt


2 green chili
1/4 cup cilantro
1 cup oil
1 and 1/2  cups of water

Directions:
  • Mix 1 tsp turmeric,1 tsp chili powder  and 1 tsp salt with telapia and fry in oil for 5 to 10 minutes until it gets cooked and crispier.
  • In a hot saucepan, fry onion with 4 tbsp oil for 2 to 3 minutes.
  • Now add all the spices and saute for 3 to 5 minutes .You can add some water if the spices gets too dry.
  • Then add pumpkin and spinach.Stir everything properly and add water.
  • Cook it for 10 minutes until everything gets cooked and tender.
  • When everything is almost cooked spread the telapia fillet ,cilantro and green chili.
  • Simmer for 5 minutes.
Serve hot with rice.
