Ingredients:
1 pound fresh spinach (chopped)
4 cups of sweet potato (peeled,cleaned and cut into bite size pieces)
1 cup shrimp (uncooked,cleaned and unveined)
1 tsp turmeric powder
1 tsp cumin powder
1 tsp red chili powder
1/2 tsp coriander powder
1 tablespoon garlic powder or fresh paste
1 tablespoon ginger powder or fresh paste
1 medium size onion chopped
3 tsp salt
2 green chili
1/4 cup cilantro
4 tbsp canola oil
1 and 1/2 cups of water
Directions:
- In a hot saucepan, fry onion with oil for 2 to 3 minutes.
- Now add all the spices and saute for 3 to 5 minutes and then add shrimp.You can add some water if the spices gets too dry.
- Cook it for 5 minutes at a medium to low heat.
- Then add sweet potato and spinach.Stir everything properly and add water.
- Cook it for 10 minutes until everything gets cooked and tender.
- Garnish with cilantro and green chili
