Cook time: 60-75 Minutes
Ingredients:
1 & 1/2 pounds Beef/Mutton (any portion or any shape you like)
2 cups chopped onion
1/2 cup fresh cut chopped garlic
1/2 cup fresh cut chopped ginger
(You can chop onion,garlic and ginger into big pieces cus eventually everything will be melt away with beef)
1/2 cup yogurt
2 bay leaf
1 big cinnamon stick
5 to 6 pieces of cloves
5 to 6 pieces of cardamom
1/2 tsp black cumin or Shah Zeera
2 black cardamom
1 tsp cumin seeds
1 tsp coriander seeds
1/2 tsp whole mace (Jaitri)
1/4 cup chopped tomato
4 to 6 green chili
2 to 3 whole red chili
1 tbsp or more salt
No water
Chopped mint and cilantro 1/4 cup(optional)
1 and 1/2 cups mustard oil
Directions:
Step 1:
Marinate the meat with yogurt and salt for 30 minutes.
Step 2:
In a hot saucepan add mustard oil ,onion,garlic,ginger,black cardamom,cloves,cardamom,bay leaf and the Cinnamon stick. Saute for 10 min. until the onion-garlic is soft and tender.
Step 3:
Now add the marinated meat,,black cumin seeds,cumin seeds, whole red chili,coriander seeds,mace and tomato.Sutee for 5 to 7 min. in a medium heat.Don't burn it.
Step 4:
Now on a low heat cook the meat for 1 to 1.5 hour until the meat gets tender.
Stir occasionally or else the meat and spices may get burned or stick to the pan.No water added in this recipy cus the meat and the yogurt will shed water.
Step 5 :
When the meat is tender , add green chili, chopped mint and cilnatro and cook it for 5min.
Beef is ready to serve with rice or pulao or paratha.
