Coconut Shrimp

This is another delicious and aromatic dish but  if you have heart-burn problem then don't eat too much .

This is another recipe for people who have hypothyroid problem. Shrimp,coconut milk,coconut oil and yogurt-all these ingredients are rich in selenium and iodine that are vital for preventing hypothyroidism.

Prep Time:20 Minutes
Cook time: 25 Minutes


Ingredients:
1 pound Shrimp (uncooked ,cleaned,unveined)
1 cup coconut milk
4 to 5 tbsp coconut oil or olive oil or  butter
1 tsp salt or more
1 cup chopped onion
1 tbsp yogurt
1 tsp garlic paste
1 tsp ginger paste(optional)
1 tsp cumin powder
1 tsp coriander powder(optional)
2 to 3 green chili
1/2 cup basil and coriander (chopped)
1/2 cup tomato chopped
4 to 5 lemon grass slices
1 medium size green pepper (cut into bite size)


Directions:
  • In a hot pan,saute onion in coconut oil or butter until gets Golden Brown. Try to use coconut oil, since its really very effective for hypothyroid.

  • Now add garlic,ginger,cumin,coriander,yogurt,salt and stir fry it for 5 minutes.

  • Now, add shrimp,tomatoes,chili,bell pepper,coconut milk and lemon grass.Cook it for 10 to 15 min. til everything gets cooked.

  • Garnish with chopped cilantro and basil and serve with  hot rice.
