Baked Cauliflower with stuffing

This is  one of  my  hot  favorite dish   .For this dish I prefer small or medium size cauliflower.Because the larger flower you  chose , the more time it takes.Its fun if you have cook something in a very easy and simple  way.
For  the stuffing ,you can use beef or chicken ,tuna, turkey or shrimp .It entirely depends on your taste .Usually I use the leftover  beef. Beef gives a enriched  flavor in the cauliflower.
 If  you have cooked beef curry , you can also use that too.
Since the beef is already cooked and got  all the spices in it . Just take out  the meat &
 cut  the meat in  small   thin pieces so that you can stuff the meat in the flower and in a hot pan  add oil then onion and fry  the onion till lightly golden brown.
Next  add 1 teaspoon curry powder, cooked beef ,green chili, cilantro and stir it  for about 5 to 8 minutes. The stuffing  is ready when you see  that  all the ingredients and the beef  blends together very well and your nose will be tickled with the nice smell.

 4 to 6 person


Preparation time:


1 hour(approx)

Ingredients:

1. 1 medium  head cauliflower
2. Salt and pepper
3. 1 egg
4. Oil
5. Red color(optional)
6. 1 tbsp flour
7. 1 tbsp grated Parmesan cheese(optional)


For stuffing :


1. ½ pound ground beef
2. 1 medium size onion
3. 2 Green chili (optional)  if you want extra hot you can put 4 to 5
4. 1/2 cup cilantro
5. 1 teaspoon Curry powder
6. 1/4 teaspoon ginger  powder
7. 1/4 teaspoon garlic powder
8. 2 teaspoon salt
9. Canola  oil  ½ cup


Direction for stuffing :
• In a pan, heat oil over medium-high temperature. Stir fry onion  till its lightly golden brown.
• Add  curry powder, ginger, garlic  powder .Add 2 tbsp   water so that the spices may not burnt.Cook it for 2 minutes.
• Mix the ground beef and cook it for 15 to 18 minutes. When the beef is almost cooked ,add the green chili and cilantro.
• Check the salt. Add more if requires.


Preparations:
1. Clean cauliflower, and trim off leaves and any brown spots. Place the whole head of cauliflower in a microwavable bowl. Sprinkle salt and pepper on the head and the bottom of the flower.
2. While you are preparing  for the stuffing , place the bowl with cauliflower in the micro oven for 15 to 20 minutes. Each side (head and bottom)is for 7 to 10 minutes.  Remember that the two -third cauliflower will be cooked in the micro oven.
3. On the head  make a  small cross cut so that you can stuff the beef stuffing .You have to put the beef stuffing very delicately  so that the cauliflower may not  be broken. Put as much stuffing  as possible .
4. Next place  the flower upside down  means the bottom side, where you will see lots of gap  and inside those gap you can put stuffing as much as possible  with finger .Putting the stuffing  is the most core and delicate job in this recipe.
5. After finishing the stuffing ,place the head on the baking try.
6. In a bowl mix one egg ,salt,pepper,1 pinch red color(optional),flour, grated Parmesan cheese and 2 tbsp oil and brush it all over the cauliflower. For extra glaze , you can brush  some oil on it .
7.      Preheat the oven to  425 degree F. and bake it for 30 to 45 minutes.


   Notes:                                Usually it gets done when  the egg on top of the cauliflower  becomes golden brown. The timing depends on the size of the cauliflower .If the cauliflower is bigger in size it may take longer time ,more than 45 minutes. So, I prepare small  to medium size.  After the cauliflower is done , garnish it with lattes and onion or you can bake  eggplant with the cauliflower.
