Yummy Fried Eggplant or Brinjal

This recipe is very easy and simple to make and it tastes really great with white or brown rice. Whoo does not love to eat eggplant!!!!My images are really very yummy, I just simply love them.

Prep Time: 5 minutes
Cook time: 10 minutes


Ingredients:
1 large eggplant (washed and cut like round shape, thickness will be 1/2", look at the image)
1 tbsp turmeric powder
Few drops of water to make paste
1 tbsp garlic powder(Optional)
Salt to taste around 1 tbsp or more.You have to taste it for how much you would like.
Oil to fry.

Need to mention that  frying eggplant requires lots of oil.If you want to use less oil ,you can do so.

Directions:

I have used  3 large eggplant for my guests.1 large eggplant will give you around 6 to 7 pieces.
  • Mix turmeric,salt and water together to make a  liquid paste.
  • Coat both sides of the eggplant  with the mixture.Leave it for 10 minutes.
  • Heat a  wok or a pan well. Now add enough oil
  • Add the eggplant pieces one by one on medium heat very carefully ... it splutters a lot ... so holding a cover as a shield will help.
  • Lower heat and cook till one side is done and browned. 
  • Turn the pieces over and brown the other side too.
  • If you want the look of eggplant like my image ,turn around the  eggplant for 2 to 3 times more.
  • Remove and keep aside.
Fried eggplant is ready to serve with rice.
