Rohu Fish Curry with Chinese Eggplant & Potato (Bengali Rui Fish Curry)

 Rohu (Rui fish) fish is very delicious and popular fish in Bangladesh.I made this fish with  Chinese eggplant and potato and it turned out  so good that I am going to make it again.

Prep Time:15 Minutes 
Cook time: 45 Minutes

Ingredients:
8 pieces of medium size descaled,cleaned Rohu (Rui) fish
2 medium size Chinese eggplant (cut into 2" stick size,See the image)
3 medium size potato (cut like potato wedges- will be 12 pieces)
 For Frying:
1/2 tsp red chili powder
1/2 tsp cumin powder
1/2 tsp garlic powder
1 & 1/2  tsp salt
Oil to fry
 For Gravy:
1 cup chopped onion
1 tbsp freshly ground garlic paste
1 tbsp freshly ground ginger paste
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric powder
1/2 tsp chili powder
1 small cinnamon stick
1 bay leaf
1/2 tsp garam masala powder
1 tbsp salt or more
1 tomato (cut into 4 long pieces)
3 & 1/2 cups water
1/2 cup  oil
3 to 4 green chili
1/2 cup chopped cilantro
Few drops of lemon juices

Directions:
Just to let you know  that to avoid the fishy smell from your fish, after descaling the fish, rub all the fishes with salt (around 2 tbsp).Wait for 30 minutes then wash 3 to 4 times with water. Be careful not to break the fishes.

Still it smells then you can rub the fishes with salt and vinegar then wash again for 2 to 3 times.


For Frying:
  • Heat a  wok or a pan well. Now add enough oil and heat till the oil is smoking hot.
  • Mix the spices in the fishes. 
  • Add the fish pieces one by one on medium heat very carefully ... it splutters a lot ... so holding a cover as a shield will help.
  • Cover, lower heat and cook till one side is done and browned. One way of knowing is the piece will easily turn over when done.
  • Turn the pieces over and brown the other side too.
  • Remove and keep aside.
For Gravy:
  • In a hot saucepan ,saute onion,bay leaf and cinnamon in oil  until onion gets  little bit golden brown. 
  • Then add all the spices and 2 to 3 tbsp water.Cook it for 5 to 7 minutes on low heat.
  • Now add eggplant and potato and  mix properly with the spices.
  • Next add 3 and 1/2 cups of water ,cook it for 10-15 minutes until everything gets tender.
  • Now add fried fishes and tomatoes .Cook for 5 minutes.
  • Then add 2 green chili , few chopped cilantro,few drops of lemon juice and simmer for 5 minutes.
  • Rohu fish curry is ready  to serve.

Garnish with green chili and cilantro.Serve hot with rice.
