Baked Macaroni & Cheese with Chicken

 Macaroni and cheese with chicken  is a perfect supper food. It's a kids' favorite, and adults like it too.But I try to make it less fatty from its original recipe. I am using fat free milk and less cheese.Hope, you will like it.

Prep Time:15 Minutes 
Cook time: 15-20 Minutes

 Ingredients :

  • 8 ounces elbow pasta
  • 1 cup chopped chicken breast
  • 1 onion, chopped
  • 4 to 5 cloves garlic, minced
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups of fat free milk
  • 1 cup mixed veggies
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large pot with boiling salted water, cook pasta until the pasta gets tender. Drain the water.
  3. In a medium skillet saute the chopped onion, and minced garlic.Add chicken,salt,pepper and saute for 5 minutes then add mixed veggies and stir fry for 5 to 10 minutes until the chicken is cooked properly.
  4. To make the sauce, in a medium saucepan melt the butter  over low heat. Once melted, add the flour and stir constantly for 2 minutes. Gradually add milk and continue stirring until thickened. Stir in 1 cup of the grated Cheddar cheese and stir until melted.
  5. Combine cooked pasta, sauteed vegetable and chicken and sauce. Pour into a 2 quart casserole dish. Add the 1/2 cup of grated Parmesan cheese to top of mixture.
  6. Bake uncovered in preheated oven until cheese on top is melted and brown, 15 to 20 minutes. Serve warm.      Enjoy and have fun.
