Ridge Gourd & Egg Curry

Cook time: 30 Minutes


Ingredients: 
 You have to use less spices for this recipe.


6 to 8 hard boiled egg


3 ridge gourd peeled, washed and cut into 2" stick size look at the image
1 cup  chopped onion
1/2 tsp garlic paste/powder
1/2 tsp ginger  powder/paste
1/2 tsp cumin powder
1/4 tsp coriander powder
1/4 tsp turmeric powder
1/4 tsp chili powder 
1 tsp yogurt 
4 tbsp oil
3 tbsp water 
1 tsp  salt
2 to 3 green chili cut in the middle length portion
Chopped mint and cilantro 1/4 cup

Direction: 
Remove the shell from the eggs and give few scratches on eggs so that it can absorb all the spices.In a hot pan add 1 tbsp oil and stir fry the egg for 5 minutes.Make it light golden brown. Transfer the eggs into a bowl.

  • Now, in a hot saucepan ,saute onion in oil over low heat for 5 minutes until onion gets  little bit golden brown.
  • Then add all the spices and 2 to 3 tbsp water.Cook it for 5 to 7 minutes on low heat.
  • Now add ridge gourd and  mix properly with the spices.
  • Next add 2 cups of water ,cook it for 10 minute covering the lid.
  • Now add the eggs.Cook for another 10 minutes.
  • Then add 2 green chili , few chopped cilantro,few drops of lemon juice and simmer for 5 minutes.
  • Ridge gourd and egg curry is ready  to serve.
