Mango Salsa with Tomato & Green Bell Pepper

Prep Time:10 to15 Minutes  


Ingredients:

2 ripe mangoes, peeled, pitted, and diced
1 red tomato diced
1 red/green bell pepper, diced
Half a red onion, chopped
3 tablespoons fresh cilantro leaves, chopped
3 tablespoons fresh lime juice
2 tbsp extra-virgin olive oil
1 Jalapeño chile, minced (include ribs and seeds for a hotter taste if desired) OR 1/2 tsp. green Tabasco sauce or your favorite hot sauce (more or less to taste)-This is optional.Don't add this if you don't like hot food.
1 tsp low fat  mayo (Optional)
Salt and pepper to taste

Directions:

  • Combine all the ingredients in a bowl.
  • Cover and allow to sit in the fridge for at least one hour.
  • Serve with chips, crackers or tortilla.
