4 cups of shredded bottle gourd
4 cups of washed spinach(wash them then chop them)
1 cup of chopped onion
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp garlic paste/powder
1/2 tsp ginger powder/paste
1 bay leaf
Few drops of lemon juice
1 tsp salt or more
1/4 cup chopped cilantro
2 green chili if you want hot and spicy4 tbsp extra virgin olive oil
Directions:
- In a hot saucepan ,add oil and saute onion til onion gets little golden brown.
- Then add all the spices except lemon juice and cilantro.
- Saute for 5 to 7 minutes.
- Next add bottle gourd and spinach and mix properly with the spices.
- Cook for 7 to 10 minutes or until everything gets tender and soft.
- Curry is ready to serve with rice or bread.
