Zucchini Flowers with Egg and Bread

Cook time: 5 Minutes
Prep Time: 6-8 Minutes 

Ingredients:

2-3 eggs
1 tbsp chopped onion
10 to 12 zucchini flowers or pumpkin flowers
2 chopped green chili
salt to taste
2 to 3 tbsp oil to fry
1 slice multi grain bread chopped into bite size pieces
Basil or chimichurri sauce 2 tbsp


Basil Sauce :
3 cups of fresh basil,mint and oregano, I got all these from my garden
1 cup of olive oil
salt
2 garlic cloves
Freshly ground black pepper


Mix all these in the blender and you will get the sauce. Keep it in the refrigerator for up to 2 weeks.


Directions:
  • Wash the flowers and cut the pistil inside the flowers otherwise they will taste bitter.
  • Combine all the ingredients in a bowl. Mix properly.
  • Heat a pan and add oil and pour the mixture and fry each side for 3 to 4 minutes until cooked throughly.
  • Serve with basil sauce.
