Garlic-Flavored Masoor Lentil Soup

 When I feel like to be a vegetarian , I make this recipe with Bengali style mashed tomato, Bengali  style mashed egg ,Bengali style mashed potato.And I really enjoyed this type of treat.No guilty feeling.Besides, it's full of protein and iron.

This is a recipe for hypothyroid  people. Any kinds of beans,dals or legumes  are good for hypothyroid since they are a good source of iodine and vitamin B6,minerals which are vital for producing energy. I am using Masoor beans which  are orange in color.



Prep Time:10 Minutes  
Cook time: 30 Minutes

Ingredients:

1 cup Masoor Beans(dal) soaked in water for 20 to 25 minutes becomes almost 2 cups of beans
2 tbsp chopped onion
4 to 5  garlic cloves chopped
1/2 tsp turmeric powder
2 bay leaf
3 tbsp canola oil
1/2 tsp cumin powder(optional)
1 pinch of black seeds
1 pinch of cumin seeds

2 to 3 whole red chili and 2 whole green chili(avoid chili if kids eat it )
7 & 1/2 cups water
1 tbsp and 1/4 tsp salt,add more if needed
2 to 3  tomato slices
Cilantro for garnishing around 2 tbsp

Directions:

 Step 1:
In a saucepan, add 2 cups masoor beans and 7 & 1/2 cups of water,turmeric,bay leaf, 2 green chili and cook it for 25 minutes until all the beans got smashed, then add salt and tomato slices.The water will reduce to  around 5 to 6 cups.
Step 2:
When the beans are done ,in a separate pan ,saute onion,garlic,2 whole red chili,black seeds,cumin seeds.Stir fry till the garlic is brown.Make sure, you  must make the garlic and onion brown or else there will be huge difference in taste.

When the garlic is golden brown ,then add cumin powder and saute for 1 minutes.And transfer the whole oil tempering  in the saucepan where  the masoor beans are cooking.

Sprinkle cilantro and simmer for 5 minutes.

Serve with rice and Bengali style mashed potato, Bengali Style mashed egg or tomato.
