Egg Curry with Chinese Eggplant

 Many of us like me are looking for recipes that can help in reducing hypothyroid. Yea,It's a killer disease.You can't cure it but at least prevent it by taking good and healthy foods that are stuffed with iodine,vitamin and minerals.


Eggs are good source of iodine and eggplant is full of vitamin A,C and  B6 which is vital for producing energy and losing weight. This recipe helped me  in re-gaining my energy level. I hope it will help you too to some extent.

Try to use organic,cage-free and small eggs. I feel like these type of eggs are much better  and have good nutrition value than regular caged hen's eggs. Moreover, organic eggs  have got orange yolk,look very dense and deep whereas regular jumbo eggs looks like too much watery and tasteless, I don't feel energetic after taking those regular eggs. After all, eggs are what hens are fed.So, I prefer not to  use regular  jumbo or extra large eggs.  

It's just my feeling.

Cook time: 30 Minutes


Ingredients:

6 to 8 hard boiled egg

1 large chinese eggplant (cut in to round shape)
1/4 cup  chopped onion
1/2 tsp garlic paste/powder
1/2 tsp ginger  powder/paste

1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp chili powder 
1 tsp yogurt 
3 tbsp water 
1/4 cup chopped tomatoes

1 tsp  salt
2 to 3 green chili cut in the middle length portion
Chopped mint and cilantro 1/4 cup
6 tbsp canola oil

Direction: 

Step 1: 
Remove the shell from the eggs and give few scratches on eggs so that it can absorb all the spices.In a hot pan add 1 tbsp oil and stir fry the egg for 5 minutes.Make it light golden brown. Transfer the eggs into a bowl.

Step 2 : 
In  another bowl , add 1/4 tsp turmeric and 2 pinch of salt and mix the round shaped eggplants and stir fry  the eggplant on both sides in the same pan with 2 tbsp oil for 5 minutes.Transfer the eggplants into  a bowl.


Step 3 :
Now in the same pan, add  3 tbsp oil and saute onion  for 5 minutes.Then add all the spices except cilantro.Stir fry for 5 minutes. Then add the eggs and the eggplants and water if necessary.Cover the lid and cook in a low heat for about 10 to 15 minutes.Stir occasionally.


In the end, sprinkle cilantro  and green chili and simmer for 5 more minutes.


Egg curry with eggplant is ready to serve with  white rice .
