White Eggplant Curry with Shrimp

Cook time: 15 Minutes

Ingredients:

1 medium size  white eggplant
10 to 15 pieces of shrimp(uncooked,cleaned,unveined)
1 cup onion chopped 
3 to 4 garlic cloves chopped
1 tsp chopped ginger
1/4 tsp cumin powder
1/4 tsp turmeric powder-(Optional)Don't put too much spices since it make the curry bitter. Accidentally , I put 1/2 tsp turmeric that's why the curry looks very yellowish.if u want to have the white look, just avoid turmeric.
1 tbsp yogurt
1 tbsp salt
3 to 4  Green Chillies
3 tbsp Oil
Few  chopped coriander/cilantro leaves

Directions:
  1. Wash the white eggplant and cut it into bite size pieces
  2. .In a hot saucepan ,saute onion,garlic,ginger in oil  until onion gets  little bit golden brown.
  3. Then add shrimp,turmeric,cumin powder,yogurt and green chili.
  4. Cook it for 5  minutes on low heat.
  5. Next add the chopped white eggplant and mix it properly with spices.
  6. cook it for  10 to 15 minutes until the eggplant gets cooked.
  7. Garnish with chopped cilantro and few drops of lemon juice.
  8. Serve with rice.                  Enjoy and have fun.
