I use around 1 pound of semi cooked frozen red spinach since fresh red spinach is not available in my area.You can use 2 pound of fresh red spinach and eventually when you cook that leafy veggie will shed water and become 1 pound.

Ingredients:
1 pound semi cooked frozen red spinach(lal shak) or 2 pound fresh chopped red spinach
1/2 cup dry small whitebait fish or keski fish
1/2 cup chopped onion
1/2 tsp garlic paste
1/2 tsp ginger paste
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/4 tsp red chili powder
1 tsp salt
1 cup water
1/4 cup oil
2 to 3 green chili
1/2 cup chopped cilantro (optional)Directions:
- In a hot pan, saute or stir fry the dry fish without oil for 6 to 9 minutes on medium to low heat.You have to make fishes little bit brown. But don't burn the fishes. The fishes will shed a smell which is common for dry fish.
- Transfer the fishes into a bowl with cold water. Leave it for 10 minutes then wash them for 3 to 4 times and keep them aside.
- In a hot saucepan ,saute onion in oil until onion gets little bit golden brown.
- Then add all the spices and 2 to 3 tbsp water.Cook it for 5 to 7 minutes on low heat.
- Now add fried dry fish and mix properly with the spices.
- Next add the red spinach and mix everything properly then add 1 cup of water ,cook it for 10-15 minutes until everything gets tender.
- Since the red spinach is already semi cooked, so it won't take much longer time.
- Then add 2 green chili , few chopped cilantro,and simmer for 5 minutes.
- Red spinach curry with dry keski fish is ready to serve. Serve with rice.
