Spinach Curry with Dry small Shrimp


Prep Time:20 Minutes 
Cook time: 30 Minutes

Ingredients:
2 pounds chopped spinach
1 small yellow squash, washed,peeled and thickly chopped
1/4 cup dry shrimps
1 cup chopped onion
5 to 6 garlic cloves chopped

1/2 tsp garlic paste/powder
1/2 tsp ginger  powder/paste
1/2 tsp cumin powder
1/4 tsp coriander powder (optional)
1/4 tsp turmeric powder
 1  tsp  salt
2 to 3 green chili cut in the middle length portion
1 cup water
Chopped mint and cilantro 1/4 cup for garnishing

Directions:
  1.  Wash the dry shrimp properly with hot water.
  2. In a hot saucepan ,saute dry shrimp  in oil over low heat for 5 minutes then add onion and chopped garlic and stir fry for 5 to 8 minutes until onion-garlic gets  little bit golden brown. 
  3. Then add all the spices and 2 to 3 tbsp water.Cook it for 5 to 7 minutes on low heat. 
  4. Now add the chopped squash and spinach and  mix properly with the spices. 
  5. Next cook it for 15-20  minute covering the lid until  the spinach is done.
  6. Check the salt.
  7.  Then add 2 green chili , few chopped cilantro,few drops of lemon juice and simmer for 5 minutes. 
  8. Spinach curry with dry small shrimp is is ready  to serve with rice.
