Baked Macaroni & Cheese with Chicken
Macaroni and cheese with chicken is a perfect supper food. It's a kids' favorite, and adults like it too.But I try to make it less fatty from its original recipe. I am using fat free milk and less cheese.Hope, you will like it.

Cook time: 15-20 Minutes
Ingredients :
- 8 ounces elbow pasta
- 1 cup chopped chicken breast
- 1 onion, chopped
- 4 to 5 cloves garlic, minced
- 1 cup shredded Cheddar cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups of fat free milk
- 1 cup mixed veggies
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large pot with boiling salted water, cook pasta until the pasta gets tender. Drain the water.
- In a medium skillet saute the chopped onion, and minced garlic.Add chicken,salt,pepper and saute for 5 minutes then add mixed veggies and stir fry for 5 to 10 minutes until the chicken is cooked properly.
- To make the sauce, in a medium saucepan melt the butter over low heat. Once melted, add the flour and stir constantly for 2 minutes. Gradually add milk and continue stirring until thickened. Stir in 1 cup of the grated Cheddar cheese and stir until melted.
- Combine cooked pasta, sauteed vegetable and chicken and sauce. Pour into a 2 quart casserole dish. Add the 1/2 cup of grated Parmesan cheese to top of mixture.
- Bake uncovered in preheated oven until cheese on top is melted and brown, 15 to 20 minutes. Serve warm. Enjoy and have fun.
