Cheese and Mushroom Omelette

This is a breakfast menu for people with hypothyroid problem. Since I have thyroid problem, I am trying to put more thyroid recipes in my blog. Eggs,cheese,mushrooms-all these are helpful in preventing thyroid problem.

Prep Time: 5 Minutes
Cook Time: 5 to 7 minutes

Ingredients:

2 eggs, beaten
1 tablespoon olive oil
1 good handful of button mushrooms, sliced
2 tbsp grated any of your favorite  cheese
1 tbsp chopped onion (optional)
1 tbsp bell pepper (optional)
1 pinch salt and pepper to taste
small handful any of your favorite herbs parsley/basil/cilantro leaves

Directions:
  1. Heat the olive oil in a small non-stick frying pan. 
  2. Place the mushrooms in the pan and fry over a high heat, stirring occasionally for around 3 minutes or until golden. 
  3. Lift out of the pan and place into a bowl and mix in the cheese,onion,pepper and basil. Basil smells really very good.
  4. Place the pan back on the heat and swirl the eggs into it. 
  5. Cook for around 2 minutes on low heat or until the egg is set to your liking.
  6. Spoon the mushroom mix over one half of the omelet.
  7. Then using a spatula, flip the omelet over to cover the mushrooms.
  8. Cook for another minute then lift onto a plate and serve with multi-grain bread..
Alternative easy method :

1. Mix all the ingredients in a bowl.
2. Heat oil in a frying pan and transfer the mixture into the pan.
3. Cook on low heat for 6 to 10 minutes until the egg is set to your liking.
