Bitter Gourd & Potato Fry with Shrimp

Vegetarian people can make it shrimpless.

Prep Time:20 Minutes 
Cook time: 15 Minutes

Ingredients:

2 cups of chopped bitter gourd
2 cups of chopped potato
1 cup of shrimp (uncooked,cleaned and unveined)
1/2  tsp turmeric powder
1/2  tsp cumin powder
1/2  tsp garlic powder
1/2  tsp red chili powder (Optional)
1 mediuml size onion chopped

2 tsp salt
2 green chili
1/4 cup cilantro
1/4 cup canola oil
Few drops of lemon juice

Directions:

  • In a hot pan  fry onion with oil for 2 to 3 minutes.

  • Then add turmeric,garlic,salt and cumin powder.Saute for 2 minutes and then add shrimp and stir fry for 5 minutes.

  • Then add bitter gourd and potato .Mix everything properly.Cover the lid and cook it for 10 minutes at medium to low heat.You can make it crispier by cooking for 5 more minutes at a low heat.

  • When everything gets tender or cooked ,add cilantro and green chili.Simmer for 2 more minutes.
  • Add few drops of lemon juice before serving.

Its really good for diabetes.

Serve hot with rice.
