Sweet & Sour Tomato Soup with Red Beans & Mushrooms

This is another recipe for those who have thyroid problem.Tomatoes,mushrooms,beans,coconut oil are good for thyroid.Very yummy and energetic.Good at lunch or for appetizer.

Prep Time: 10 Minutes 
Cook time: 15 Minutes
Serving size: 2 to 4 persons

Ingredients:

1.3 small or 2 medium size red tomatoes
2.1 tbsp chopped onion
3.1 garlic clove
4.1 tsp ginger(optional)
5.1 green chili
6.Few mint leaves
7.Few chopped cilantro
8.1 celery stick chopped
9.5 cups of water

1/4 tsp red chili powder
Pinch of cardamom powder
2 tbsp coconut oil
1 cup red beans cooked ( I am using canned one-brand is Goya)-if you use the canned one then wash them 2 to 3 times before giving it to the soup.
1 cup chopped Mushrooms
3 tsp salt or more
4 tsp sugar or more---The real taste of this soup depends on proper combination of sugar and salt.So, you need to check if the taste reaches its desired taste level by adding more of sugar and salt. More means pinch.
Lemon slices, and chopped cilantro for garnishing.

You can customize this soup by adding --chicken pieces,creme or any of your favorite cheese.

Directions:

  1. Put all the ingredients from 1 to 9 in  a blender machine and blend it for 2 to 3 minutes.
  2. Transfer the mixture in a saucepan and add rest of the ingredients except beans and cook it for 5 minutes. 
  3. Since the beans are already cooked, over cooking will make them  very mushy.
  4. Next add red beans and cook for another 5 minutes.Check the sugar and salt combination.
  5. Yummy tomato soup is ready  to serve with bread.
  6. Garnish with lemon slices and chopped cilantro.
